Ingredients:
- Tuscan bread slices
- 500 g of fresh Pecorino Toscano PDO
- 60 g of butter
- 10 anchovies in oil
- Parsley to taste
Method:
- Preheat your oven to 200°C (390°F).
- Place a slice of fresh Pecorino Toscano PDO on each slice of bread.
- Bake the crostini for 5-10 minutes until crunchy and the cheese melts.
- Meanwhile, melt the butter in a frying pan, add the anchovies, and stir gently to create an anchovy sauce.
- Pour the sauce over the crostini, garnish with parsley, and serve immediately.
Greek Olive Tapenade

- 100 g pitted Greek olives (kalamata, green, etc.)
- 1 anchovy fillet, finely chopped
- 20 g capers
- 1 tablespoon parsley, chopped
- 15 garlic cloves (preferably roasted)
- 1 ½ tablespoons juice from Costa d'Amalfi PGI Lemon
- 75 ml olive oil
- Salt and pepper to taste
Method:
- Pulse olives, anchovies, capers, garlic, lemon juice, and parsley in a food processor until combined.
- Slowly pour in the olive oil until a thick paste forms.
- Serve with toasted bread, pita, or crudités for dipping.
Spaghetti with Lemon from Amalfi Coast PGI
One of the favourite ways to use Costa d'Amalfi PGI Lemons is in delicious pasta dishes.
Ingredients (serves 5):
- 320g spaghetti
- 60g butter
- 2 teaspoons extra virgin olive oil
- 2 Lemons from Amalfi Coast PGI
- 2 tablespoons single cream
- Chopped parsley to serve
- Salt and pepper to taste
Method
To prepare lemon spaghetti, start by cooking the spaghetti in salted boiling water. While the spaghetti cooks, grate the zest of a Lemon from Amalfi Coast PGI and extract the juice. In a pan, heat the oil and melt the butter, then add half of the grated lemon zest and the lemon juice. Stir and cook over low heat for a minute. Drain the spaghetti two minutes before it is fully cooked, and transfer to the pan. Add two ladles of pasta cooking water and finish cooking, stirring occasionally. Pour in the cream and stir to combine it with the other ingredients. Turn off the heat, add the chopped parsley, the remaining grated lemon zest, a sprinkle of pepper, and stir for a few minutes. Your spaghetti with Lemon from Amalfi coast PGI is now ready to be served.

- Ice cubes
- 1 oz bitters
- 1 oz Vermouth di Torino PGI Red
- Splash of soda water
- Orange slice
- Costa d'Amalfi PGI Lemon zest
Method:
ill an old-fashioned glass with ice cubes.
- Pour in 1 oz of bitters and 1 oz of Vermouth di Torino PGI Red.
- Add a splash of soda water.
- Garnish with an orange slice and the zest of Costa d'Amalfi Lemon PGI.
